xo fried rice

xo fried rice is a great way to use up the leftover rice accumulating in the back of your fridge. Also, it’s so easy to make and is an umami bomb of deliciousness. Basically, it’s a week night win.



  • micro plane

  • chef’s knife

  • cutting board

  • wok

  • fish spatula

  • prep bowls (3)

  • serving dish

  • measuring cup

  • measuring spoons


2 cups leftover rice

1/2 cup xo sauce

3 cloves garlic grated on a microplane

3 scallions

1 tsp kosher salt

1 Tbsp oil for cooking

fried egg to top (optional)



  • mince or grate your garlic and set aside

  • finely mince scallions and set aside

  • heat a wok till it is rip roaring hot and add your oil

  • once oil is heated add your leftover rice and stir fry, moving the rice constantly so it doesn’t stick

  • once the rice is heated through, add your garlic and salt and continue to stir the rice

  • after a few minutes (don’t let the garlic burn) remove the rice from the wok and place in a separate bowl

  • rinse out your wok and dry thoroughly on the stove

  • add xo sauce to your very hot wok

  • stir the sauce around for about 2 mins and add the chopped scallions

  • stir for another 2 minutes

  • add the rice back into the wok and thoroughly mix the rice with the xo sauce

  • serve immediately, ideally with a fried egg on top
